Step 1
Line a muffin pan with baking cups and spray with nonstick spray*
Step 2
In a bowl mix together peanut butter, protein powder and honey
Step 3
Add chocolate chips and coconut oil to a microwave safe bowl and microwave for 90 seconds, stirring every 30 seconds, until fully melted **
Step 4
Spoon a layer of melted chocolate into each baking up, then about 2 teaspoons of the peanut butter mixture, formed into small discs
Step 5
Top with more melted chocolate so that the peanut butter is fully covered
Step 6
Place muffin pan in the freezer for at least 20 for chocolate to harden
Step 7
Keep stored in an airtight container for up to 3 days, or for longer in the refrigerator or freezer
