Ingredients: 100 ml dashi stock; 2 tbsp red miso paste; 1 tbsp sake; 1 ½ tbsp mirin; 1 tsp soy sauce; 2 tbsp light brown sugar; ½ tbsp white sesame seeds; 200 g pork tenderloin block (or precut medallions); salt and pepper; 4 tbsp all-purpose flour (for dusting); 1 egg; 1 tbsp milk; 1 tsp cooking oil; 60 g panko breadcrumbs; cooking oil (for deep frying)

Lean and meaty pork medallions coated with crispy panko breadcrumbs and fried until golden, then coated with a rich and glossy Nagoya-style red miso sauce. This regional recipe is one that I've grown up with, and it's one of my personal favorites!
