Whipped Feta Lemon Orzo

Garlicky lemony orzo layered onto creamy whipped feta. There are plenty of delicious toppings added as well. This vegetarian recipe is fresh, simple, but still extremely flavorful.

Ingredients

4 ozFeta
I used a block rather than crumbled
½ cupGreek Yogurt
add more if needed
1 Tbsplemon juice
1 tsplemon zest
1 TbspExtra Virgin Olive Oil
drizzle in more if necessary, additional to serve
1 Tbspbutter
3cloves garlic
minced
1 cupOrzo
uncooked
2 cupsBroth
chicken or vegetable, additional as needed
salt
to taste
pepper
to taste
1 TbspLemon Juice
additional to serve
1 tspHot Honey
to serve
2 TbspPine Nuts
toasted, to serve
2 TbspPistachios
chopped, to serve
2 TbspFresh Mint
chopped, to serve
½ tspRed Pepper Flakes
optional, to serve
Instructions
Whipped Feta
Step 1
Add feta, greek yogurt, lemon juice, and lemon zest to a food processor. Pulse while drizzling in olive oil until smooth and creamy. Add additional yogurt or olive oil if necessary. Set aside to serve.
Orzo
Step 2
Heat a large skillet or sauté pan over medium heat. Melt butter. Add garlic and lemon zest. Cook for 1 minute, stirring often. Add orzo and toast for 1 minute, stirring often.
Step 3
Pour in broth and add salt and pepper to taste. Bring to a boil then lower heat to medium-low and simmer until the orzo is cooked through and most of the broth is absorbed. Stir often so the orzo doesn't stick to the bottom of the pan. Add additional broth if necessary. Once the orzo is cooked through, mix in lemon juice.
Step 4
To serve, spread some whipped feta on the bottom of a plate. Drizzle with olive oil and hot honey. Spoon some orzo on top of the feta. Sprinkle with pine nuts, pistachios, mint, optional red pepper flakes, and additional lemon juice.
