Instructions
Step 1
Heat olive in a sauté pan over medium heat. Add thinly sliced shallots and cook for 3 minutes, stirring occasionally, until they start to get some color. Add minced garlic and cook, stirring often, for another minute.
Step 2
Add Calabrian chili paste and tomato paste and combine. Cook for 5 minutes until darkened in color. Pour in wine and scrape up the brown bits on the bottom of the pan. Cook for 2-3 minutes until most of the wine is cooked off.
Step 3
Meanwhile, in a separate pot, cook pasta according to package instructions until al dente.
Step 4
Turn heat to low and pour in heavy cream. Stir until well combined. Add salt and pepper to taste.
Step 5
Once the pasta is cooked, transfer it straight to the sauce. Pour in about 1/4 cup of pasta water and toss the pasta into the sauce. Add more pasta water if needed for the desired consistency. Mix in parmesan cheese until the cheese is melted. Serve with additional parmesan cheese.
