Instructions
Step 1
Fry onion then add garlic and ginger
Step 2
Stir in curry paste, peanut butter and sweet potato, cut into chunks, followed by coconut milk and 200ml water
Step 3
Simmer for 25-30 mins until sweet potato is soft
Step 4
Stir in the spinach and lime juice
Step 5
Serve with rice or couscous, and a naan
