Step 1
In a medium saucepan over medium heat, combine the strawberries, granulated sugar, and lemon juice. Cook until the strawberries are soft and the sugar has dissolved, about 10 minutes. Set aside to cool.

In a large mixing bowl, beat the cream cheese until it's smooth. Add in the Greek yogurt, powdered sugar, and vanilla extract, and continue beating until everything is well combined.

Once the strawberry mixture has cooled, puree it in a blender until smooth.

Layer the popsicle molds starting with a spoonful of the cream cheese mixture, followed by a spoonful of the strawberry puree. Repeat until the molds are filled, leaving a little space at the top.

Mix the crushed graham crackers with the melted butter and spoon this mixture into the molds to create the "crust" of the cheesecake.
Step 6
Insert the popsicle sticks into the molds and freeze for at least 4 hours, or overnight for best results.
Step 7
To serve, run the molds under warm water for a few seconds to help release the popsicles. Enjoy this refreshing and creamy treat!
