Instructions

Step 1
Pare the skin of five or six long cucumbers. Cut in half lengthwise, then slice crosswise (moderately narrow).
Step 2
Then, chop one white onion and one yellow onion into sizeable chunks or slices.
Step 3
In a Mason jar (or any kind of container that seals tightly), pour ¼ cup of vegetable oil, ¾ cup of apple cider vinegar, ¾ cup sugar, and salt and pepper to taste. Shake until mixed well.
Step 4
In a bowl, place half of the cucumber slices. Cover with a layer of onions (about half). Add the remaining cucumber slices and then the rest of the onions.
Step 5
Pour the oil-and-vinegar mixture over the top, then refrigerate for 24 hours.
