Instructions
Step 1
Preheat oven to 400°F. Place parchment paper on 2 cookie sheets, set aside.
Step 2
Combine dry ingredients in large bowl, whisk together thoroughly, set aside.
Step 3
Beat eggs, set aside.
Step 4
Combine cheeses in medium bowl and microwave at 1 minute increments till melted.
Step 5
Stir with large spoon till well combined, and cool enough to to handle with rubber-gloves hands. Reaching into this mixture should warm but not burn your hands - you don't want the mixture to cook the eggs in the next step.
Step 6
Put on rubber gloves and mix eggs into the cheese by squeezing the glob together and stir with your hands until eggs and cheese are well combined. Add this mixture into the dry ingredients, squishing everything together quickly till it forms a sticky ball.
Step 7
Divide into 10 smaller balls. I find it easier to weigh the big ball (in grams), then divide by the number of buns desired, creating them by weight. Flatten the balls slightly into 5" circles.
Step 8
Place on cookie sheet. Bake at 400° till lightly golden. 10-15 minutes.
Step 9
Cool and slice horizontally.
