Instructions

Step 1
Halve the ciabatta in two. If you want, gently toast in the oven and butter.
Step 2
Mix the halved tomatoes in a bowl together with the balsamic vinegar, garlic oil, salt, and pepper. Leave to sit for at least 10mins.
Step 3
Start assembly. Place one slice of beef on a ciabatta half, spread generously with aioli, and top with the tomatoes. Gently toss the rocket in the remaining balsamic mixture of the tomatoes and add that to the sandwich. Make sure not to add too much liquid with either the rocket or tomatoes.
Step 4
Finish with the remaining slice of beef and ciabatta top.
