Instructions

Step 1
Grate the zucchini’s and squeeze out and excess liquid.
Step 2
Add the grated zucchini, carrot, diced onion and chopped broccoli to a frypan with 2 tbsp olive oil, garlic, powder and mixed herbs.
Step 3
Sauté on medium heat for 5-10 mins until vegetables soften.
Step 4
Add cooked vegetables into a mixing bowl with the shredded cheese, chives and flour. Stir until combined.
Step 5
In a separate bowl, whisk together the eggs and oil. Pour the egg mixture in with the vegetable mixture and mix well until combined.
Step 6
Pour mixture into a lined tray/baking dish. Sprinkle with extra grated cheese (optional).
Step 7
Bake at 180C for 45 mins until golden on top and cooked through.
