Italian garbanzo soup

I had this at Mangia Bene and it was so good I wanted to try it at home. What I liked was that the broth flavor was mild and subtle so the vegetables and beans were the stars of the soup. This was my first attempt and I may have over seasoned with the Italian seasoning. I didn’t measure, just made the broth proportional to the amount of vegetables that I chopped. I ended up using four cups of broth and one can of low sodium garbanzo beans packed in water.

Instructions

Step 1
Cook onion, celery and carrots together with garlic and Italian seasoning. Add chicken or vegetable broth and simmer. When veggies are tender and broth has a mild flavor, add a little tomato paste and the garbanzo beans. Add salt to taste.
