Instructions
Step 1
- [ ] Heat the oil in a large pot and cook the onion over low heat for 5 minutes.
Step 2
- [ ] Add the celery and cook for another 5 minutes.
Step 3
- [ ] Add the cauliflower and vegetable stock. Cover the pot and simmer for 10 minutes, until the cauliflower is tender.
Step 4
- [ ] Remove from heat and stir in the coconut cream.
Step 5
- [ ] Blend the soup to a smooth pure using a hand blender or jug blender.
Step 6
- [ ] Season well with salt and ground black pepper.
Step 7
- [ ] Simmer for a few minutes to reheat. Dress the soup with crispy bits of bacon and a swirl of coconut cream
