Instructions
Step 1
Trim the ends of the beans and cut into 2-3cm long chunks. Rinse and drain well.
Step 2
Heat up a pan, add oil, and stir fry the mince until browned. Add the sauce made from soy sauces, oyster sauce, shaoxing, and sugar. Combine well, then take out the mince and set aside.
Step 3
In the same pan, top up the oil and sauté garlic until just starting to brown slightly. Add the beans and stir fry for a few mins until softening.
Step 4
Tip the mince back in. Make a cornstarch slurry by adding a generous amount water and add this too. The water should just about submerge the beans.
Step 5
Bring to the boil, then turn down the heat to a gentle simmer. Keep stirring occasionally and cook for a further 5-10mins until the beans are cooked and tender. Serve over rice.
