Ingredients
10 servings
3 lbskinless chicken thighs
fully trimmed, fully trimmed
7.5carrots
medium, cut into batons or half moons
1 lbgreen beans
trimmed
5 bunchesbroccolini
ends trimmed
2 ½ tspsesame oil
2.5red chilli peppers
small, optional, chopped
2 ½ cupsmicrowave brown rice
cooked according to packet directions
0.67 bunchfresh cilantro
optional, roughly chopped
glaze
5 Tbssweet chilli sauce
5 Tbssoy sauce
or tamari if gluten free
5 Tbsnatural peanut butter
crunchy, or other nut butter
Instructions
Step 1
Preheat oven to 355°F/fan-forced 325°F and line a baking sheet with baking paper.
Step 2
2 Whisk glaze ingredients together until combined and toss with chicken. Arrange chicken on baking sheet and bake for 25-30 minutes or until cooked through.
Step 3
3 In the last 10 minutes of cooking the chicken, add carrots to a saucepan of cold salted water and bring to the boil. Add beans and broccolini and continue to simmer for 5 minutes, or until vegetables are tender-crisp. Drain and toss with oil and chilli.
Step 4
4 Divide rice, chicken and vegetables between plates and scatter with cilantro, if using, to serve.
