Ingredients
10 servings
5 tspmiso paste
5 tspsriracha sauce
chilli garlic sauce
2 lbskinless chicken breast
5 tspsesame seeds toasted
salad
3 ⅛ cupsmicrowave brown rice
warmed according to packet directions
1 ¼ cupnapa cabbage
shredded
2 ½ cupsfrozen podded edamame
defrosted
5scallions
thinly sliced
20 sprigsfresh mint
leaves picked & chopped, plus extra to serve
10 tspsesame oil
5 Tbsrice wine vinegar
or other vinegar
salt
to taste
pepper
to taste
Instructions
Step 1
Combine all the salad ingredients together in a large bowl and season with salt and pepper, to taste. Set aside to allow the cabbage to soften slightly.
Step 2
2 Spray oil on BBQ or a non-stick griddle pan before placing over medium heat.
Step 3
3 Combine the miso and chilli paste in a bowl. Add the chicken and toss to coat.
Step 4
4 Grill chicken for 8-10 minutes, turning once, until cooked through. Transfer to a board to rest for a few minutes, then slice.
Step 5
5 Divide salad between serving bowls and top with chicken.
Step 6
6 Sprinkle with sesame seeds and extra mint to serve.
