Instructions

Step 1
Boil a large pot of water and add the sago. Cook for around 10mins until there is still a small speck of white visible in each one. Turn off the heat, put on the lid, and leave to sit for another 10-15mins until all the whites have disappeared and the sago are clear and transparent like jelly. Rinse well under cold water and set aside.
Step 2
Dice up the mangoes. Reserve the prettiest third for decoration. Peel the pomelo or grapefruit and break into small pieces.

Option 1 - all mixed together

Step 3
Blend the remaining two thirds mango with your milk/coconut milk until smooth. Stir in the sago and half the pomelo/grapefruit. Serve into bowls or glasses, and decorate with the remaining fruit.

Option 2 - pretty layers

Step 4
Blend the remaining two thirds mango with two third of the milk/coconut milk until smooth.
Step 5
In your serving glass, build up the layers as follows: mango, grapefruit, sago, milk/coconut milk, mango purée.

To serve

Step 6
Best served after chilling in the fridge for a few hours.
Step 7
Mix altogether before eating.
