Instructions

Step 1
Soak the rice in water for at least 2 hours.
Step 2
Take around 3/4 of the rice and add to a food processor along with a cup of water. Blitz until smooth.
Step 3
Marinate the remaining rice with oil and salt for 20mins.
Step 4
Add the blitzed and marinated rice to your hotpot pot. Fill with water and cook on medium-low heat until the rice is just cooked and the consistency has thickened. Keep mixing throughout to prevent it burning on the bottom. Scoop out the rice with a sieve and set aside for later.
Step 5
Your hotpot base is now ready! Mix together your choice of dipping sauce. Recommended eating order: seafood, meats, vegetables.
Step 6
At the end, put the rice back in the pot, heat up, and enjoy a delicious bowl of flavourful congee. Recommended: reserve some vegetables to have at this stage in the congee.
