Prepare brownie mix per package instructions. Portion batter into greased mini-muffin pans for 1/4 of the recommended time, or until toothpick comes out mostly clean (for gooier brownies).

Using a stand mixer with a paddle attachment, beat butter and mascarpone cheese until light and creamy, about 2 minutes. Add vanilla extract and salt. Add sugar, half a cup at a time and continue beating until smooth. Add more sugar, if needed to reach desired consistency and sweetness.

Instructions for assembly:

Step 4
Put frosting in pastry bag, cut off a little of one corner. Pipe frosting on the flat side of strawberry, then place it upside down on each brownie, pushing slightly to secure in place and creating a slight welling around the perimeter. Top the tip of the strawberry with a dot of icing to finish the Santa hat.
