Instructions

Step 1
spray your 8” x 8” pan with cooking spray and lime with parchment paper

For the crust

Step 2
beat together the butter, flour, and powdered sugar. Once combined press down into your prepared pan
Step 3
put the crust in the fridge to chill for 10-15 mins (skip the chilling if your using a glass pan)
Step 4
preheat your oven to 350 f
Step 5
bake the crust for 15-18 mins or until light golden brown

For the filling

Step 6
using a hand mixer combine the lemon juice, zest, eggs, sugar, and flour on medium high speed until combined.
Step 7
pour the filling on top of the baked crust and bake at 350 f for 25-30 mins until the top is almost set and it only jiggles a little bit. (check it at 25 mins you don’t want to over cook the curd)
Step 8
let the bars completely cool in the pan before covering and storing in the refrigerator, top with powdered sugar before serving
