Instructions

Step 1
1. Bring the water, vinegar, salt, and sugar to a boil.
Step 2
2. Put the mustard seeds, peppercorns, into a clean quart jar (4 cups)

3. Place the cucumber pieces into the jar, adding the the garlic and dill as you go. Pack as tightly as possible-you don’t want the cucumber pieces to float up out of the brine.

4. Pour the hot brine over the other ingredients. The cucumbers should be completely immersed in the brine, but unlike pickles destined for canning, it is not necessary to leave much (or any) head space between the surface of the brine and the rim of the jar.
Step 5
5. Affix the lid and leave the jar of your new batch of house pickles to for 1 hour. Transfer to the refrigerator and wait at least 3 days for the flavors to mellow before tasting.
