Chunky Vegetable and Chicken soup, made in my Ninja Soup maker, easy to make 30 minutes cooking time taste yummy .

Ingredients
4 servings
1Onion
large, peeled, halfed and quartered
4garlic cloves
peeled
3carrots
medium, peeled and chunky chopped
1Sweet Potato
large, peeled and chunky chopped
Celery
chunky chopped
2bell peppers
1 red 1 green chopped
1 tspdried dill
1 tspdried chives
125gskinless chicken breast
chopped into chunks
750 milVegetable stock
2 TblspWhole grain mustard
2 cupsSpinach
chopped up
50gmushrooms
chopped, I used Shiitake mushrooms but you can use any mushrooms
2 tspolive oil
I used garlic infused olive oil
salt
to taste
pepper
Instructions
Step 1
1: chop and quarter onion, peel garlic cloves and leave whole. If using a pot finlay chop onion, garlic and saute for 5 minutes. 2: put onion, garlic cloves, oil, dill, chives, salt and pepper into a pot/soup maker, if using soup maker select chop, two times just to chop and mix together. Then select Saute. 3: add vegetable stock, chicken, carrots, sweet potatoes, Cook on a high heat for 15 minutes. 4: if using a pot reduce heat add leeks, celery, spinach, mushrooms and whole grain mustard and peppers and simmer for 30minutes and occasionally stirring, or select chunky soup program. 5: serve in a bowl or your favourite mug, and enjoy.
