1 poundlean ground beef
4mushrooms
grated or chopped
2 tablespoonsground flax
¼ cupfresh basil
chopped
1egg
¼ teaspoonsalt
¼ teaspoonblack pepper
freshly ground
2 tablespoonsavocado oil
or olive oil
0.5yellow onion
or red, chopped
2garlic cloves
minced
1 x 15 ouncecan diced tomatoes
1 teaspoonoregano
2 cupsbroccoli
cut into florets
2 cupscauliflower
cut into florets
32 ounceschicken broth
or vegetable
¼ cuplemon juice
Instructions
Step 1
1. Prepare the meatballs. Place the beef,

mushrooms, ground flax, basil, egg, salt and

pepper in a large bowl. Mix well. Form into

1-inch meatballs and transfer to a plate.

2. Heat a large stockpot over medium heat

and add the oil. Add the meatballs and cook

2-3 minutes, turning occasionally until the

meatballs brown. Scatter the onions and garlic

around the meatballs.

3. Add the diced tomatoes and oregano and cook

1-2 minutes, gently stirring until the onions soften.

4. Add the broccoli, cauliflower and broth. Bring

to a simmer over medium heat and cook

5-6 minutes, until the broccoli is tender.
Step 15
5. Before serving, stir in the lemon juice.
