Vegetables with Lamb - Mediterranean Style

Ingredients
4 servings
1 Tbspolive oil
250gextra lean diced lamb
140gshallot
halved
2courgettes
large, cut into chunks
½ tspground cumin
½ tsppaprika
½ tspground coriander
1red pepper
cut into chunks
1orange pepper
cut into chunks
1green pepper
cut into chunks
1garlic clove
sliced
150mlvegetable stock
250gcherry tomatoes
coriander leaves
roughly chopped
Instructions
Step 1
Heat the oil in a large pan. Cook the lamb and shallots over a high heat for 2-3 mins until golden. Add the courgettes and stir-fry for 3-4 mins until they begin to soften.
Step 2
Add the spices and mix well, then add the peppers and garlic. Reduce heat and cook over a moderate heat for 4-5 mins until they start to soften.
Step 3
Pour in the stock and stir well. Add the tomatoes, season, then cover with a lid and simmer for 15 mins, stirring occasionally until the veg are tender. Stir through the coriander to serve.
