This taco recipe is flavourful with red kidney beans! You can decide from soft tacos or hard shell tacos, both work great with this recipe

Ingredients

0.5 tintomato tinned
2 tspPaprika
2 tspcumin powder
2 tspred chilli powder
1red pepper
3spring onion
chopped
1chicken stock cube
½ tsppepper
to taste
½ tspsalt
to taste
1Red Kidney beans tinned
2 Tbsolive oil
2red onion
Cherry tomatos
1fresh lime juice
100 gramsgrated cheese

fresh, for serving

Instructions
Step 1
First prepare salsa dressing for tacos. Finely chop red onions, tomatoes and place in a bowl. Squeeze lime juice and add a pinch of salt to taste. Separately in another bowl Grate cheese for tacos and set both aside.
Step 2
In a large pan, fry onions in 2 tbs olive oil until golden brown.
Step 3
Add minced garlic and fry for a further 2-3 minutes on medium low heat
Step 4
Add the minced meat and fry until brown
Step 5
Add the fresh tomato, tinned tomato and tomato paste. Cover with lid and cook on medium low heat for 5 minutes
Step 6
Once tomatoes are cooked and the sauce has thickened add all powder spices and salt and pepper, cook for a further 5 minutes on medium heat
Step 7
Add all remaining ingredients together, chopped red pepper, spring onions, 1 chicken stock cube and red kidney beans. Cook for a further 5-10 minutes on low heat and set aside for serving! Cook according to sauce thickness desired for tacos!
Step 8
Serve with cooked taco shells or soft tortilla tacos. To build your taco first add some grated cheese, then layer with taco minced meat, and finally top with salsa and the crème fresh. Enjoy!
