Instructions

Step 1
Melt the coconut oil in a saucepan on medium-heat.
Step 2
Saute the leek and garlic for 2-3 minutes then add Brussels sprouts and halloumi.
Step 3
Once sprouts and halloumi are starting to brown (about 4-5 minutes), add greens to the saucepan and sauté until wilted/well-cooked.
Step 4
Make a hole in the greens and crack an egg in so it sits in the middle, repeat. Reduce the heat so that the eggs cook through.
Step 5
Cook for 5-7 minutes on low heat, until the egg white has set but the yolk is runny.
Step 6
Remove from heat and serve on to plate, top with chilli flakes and a pinch of salt.
