Instructions
Step 1
In a large pot, melt the butter and olive oil over medium heat. Add the thinly sliced onions and cook slowly, stirring occasionally, until they become caramelized and golden brown. This can take 30-45 minutes.
Step 2
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Step 3
If using white wine, pour it into the pot and let it simmer for a few minutes, allowing some of the alcohol to cook off.
Step 4
Add the beef broth and bay leaf to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes. Season with salt and pepper to taste.
Step 5
While the soup is simmering, preheat your oven's broiler.
Step 6
Ladle the hot soup into oven-safe bowls or ramekins. Place a few slices of baguette on top of the soup in each bowl, then sprinkle a generous amount of grated cheese over the bread.
Step 7
Place the bowls under the broiler until the cheese is bubbly and golden brown, typically 2-3 minutes. Be sure to watch them closely to avoid burning.
Step 8
Carefully remove the bowls from the oven (they will be hot), let them cool slightly, and serve your delicious French Onion Soup!
