Instructions

Step 1
Preheat oven to 425°F.
Step 2
Wash and dry sweet potatoes, lightly coat the outside with olive oil.
Step 3
Place on a baking sheet and roast for 50 minutes until tender.
Step 4
Remove from oven, cool slightly, cut in half lengthwise, and scoop flesh into a large mixing bowl.
Step 5
Add almond milk and olive oil.
Step 6
Mash together until desired consistency is reached, adding more almond milk if needed.
Step 7
Season with thyme, salt and freshly ground black pepper.
Step 8
Garnish with fresh herbs like chives, parsley, or thyme if desired.
Step 9
Serve warm.
