Instructions
Step 1
Blend vinegar, cilantro, oregano, garlic, olive oil, and salt until smooth.
Step 2
In large bowl, coat chicken in 1/2 of chimichurry sauce and let sit for a bit (~10 minutes or longer).
Step 3
Grill chicken in pellet grill at 450 degrees F for 10 minutes per side until internal temp reaches 165 degrees F
Sweet potatoes
Step 4
Wash potatoes. Slice off ends and discard. Cut potatoes into discs or wedges as desired.
Step 5
Toss potatoes in olive oil and salt. Bake at 400 for 15-20 minutes until desired doneness.
