Instructions

Step 1
1. Slice the chicken breast into bite-sized pieces.

2. Dice the red onion, red bell pepper, and zucchini. If using fresh garlic, mince it finely.

3. Bring a large pot to a boil. Add the whole grain penne pasta and cook according to the package instructions (usually about 8-10 minutes).

4. In a large skillet or frying pan, heat a bit of cooking oil over medium-high heat.

5. Add the chicken breast pieces to the hot skillet and cook the chicken until it's no longer pink and has a nice golden brown color, which typically takes around 5-7 minutes.

6. Add the diced red onion, red bell pepper, and zucchini to the skillet with the cooked chicken.

7. Saute the vegetables for about 5 minutes or until they become tender.

8. Pour the tomato sauce over the pasta, chicken, and vegetables.

9. Taste the dish and adjust the seasoning with additional salt, pepper, dried basil, and dried oregano.

10. Drain the cooked pasta and set it aside.

11. Serve the pasta with the chicken and vegetables on a plate or in a bowl.
