1. Prepare the pearl couscous according to the instructions on the package and let it cool down slightly. 2. Heat the olive oil in a skillet over medium-high heat. Add the red onion, bell pepper, zucchini, and frozen peas. Sprinkle with garlic powder and cook for 8-10 minutes or until the vegetables have softened a bit. 3. In a bowl, add lettuce, pearl couscous, cooked vegetables, feta cheese, and hummus. Season with salt and pepper. 4. Toss everything together and serve.
