Instructions

Step 1
Add the sweetcorn, carrot, onion, parsley in a bowl. Stir well to combine. Crumble in the feta. Add flour, baking powder and salt. Mix well. Add egg, stir til combined. Heat 5ml oil in a pan. Scoop 2 T of batter into pan, using back of spoon to flatten and round. Cook on medium heat until golden and done on inside. Place on plate lined with paper towel. Serve with lettuce and lemon wedges.
