Instructions
Step 1
1. Stirring occasionally, simmer the apple cider in a small saucepan over low heat until you’re left with about ½ cup. Takes around 20 minutes.

2. Preheat oven to 180C. Grease a donut pan with vegetable oil. Set aside.
Step 3
3. Whisk the flour, both sugars, baking soda, baking powder, cinnamon and salt together in a large bowl. Set aside.

4. Add the vinegar to the milk, stir and let it sit for 10 minutes.

5. In a medium bowl, using a spoon, mix together the cornstarch and water until thin and watery. It will be thick and tacky at first.

6. In the medium bowl, whisk together the cornstarch water mixture, the homemade buttermilk, oil, and the reduced cooler apple cider until combined.
Step 7
7. Slowly pour the wet ingredients into the dry and use a whisk to combine. If it gets too thick, switch to using a spatula.

8. Fill each donut well about halfway. Smooth the batter with a tiny knife or the back of a small spoon.
Step 9
Bake the donuts in the center rack of the oven for 11 minutes.

9. Let the donuts cool in the pans for at least 5 minutes before taking them out.
Step 11
10. Dip each donut in the oil and then in the sugar and cinnamon mixture. Then place it on a wire rack.
