Instructions
Step 1
Season the chicken breast with salt and pepper.
Step 2
Heat olive oil in a pan, add the chicken pieces, and cook for 5-6 minutes until they are browned and cooked through.

Add the red onion, carrot, zucchini, and bell pepper until the onion becomes translucent.
Step 4
Then add the garlic and cook for 2 minutes

Briefly cook the risotto rice in the pan
Step 6
Add vegetable broth and soy sauce. Let this simmer for 20 minutes until the rice is cooked and the liquid has been absorbed
Step 7
To prevent the risotto from burning or sticking to the bottom of the pan, stir frequently.
