Instructions

Step 1
Preheat oven to 350 and line an 8x8 baking tin with parchment paper.
Step 2
In a large bowl, combine chocolate chips with one cup of melted butter, whisk until chocolate is melted.

Whisk in sugar.

Add 4 eggs one at a time, whisking well between each addition.

Mix in oil and vanilla extract.
Step 6
Gently fold in flour, cocoa powder, baking powder, and salt.

Bake at 350 for 65-70 minutes.
Step 8
Once the brownies are out of the oven, let them cool for 20 minutes then place in refrigerator for another 30 minutes.
Step 9
While the brownies cool, make frosting.
Step 10
Using an electric or stand mixer, beat 1/2 cup softened butter until light and fluffy.
Step 11
Mix in the vanilla extract, peppermint extract, and milk. Gradually add in powdered sugar. (optional: 1/2 tsp red food coloring)
Step 12
Spread the frosting on top of the brownies, cut into squares, and enjoy!
