I just love these crunchy golden cookies . They are quick and easy to make vegan friendly and everyone always loves them

Instructions
Step 1
Sprinkle some sugar onto a work surface then put the puff pastry on top of the sugar. Put parchment paper over the pastry and use a rolling pin to gently push the pastry so the sugar is spread all over the bottom ( note you can use vegan puff pastry it works just as well )

Step 2
Sprinkle the remaining sugar on the top of the pastry then use the parchment paper and roll the sugar in again. Roll each side towards the middle ( lengthways ) then put in the freezer for 20 minutes
Step 3
Cut the cookies then place on a baking sheet . Bake at 180 c /320 f for 18 minutes flipping half way . Once golden and crunchy remove from the oven and let cool . Enjoy
