You have to try this super simple slow cooker recipe! Carrots seem so simple, but this recipe is something special. Sweet and buttery, this makes a perfect side dish.
I love making dishes like this because I can throw everything into my slow cooker and just let it do its thing. You have your carrots simmering in that apple juice for a few hours and then finished off with some brown sugar and butter for some extra flavor. Crushed nuts are an optional topping but it does give it another nice level of flavor and some added texture.

Step 1
In your slow cooker, combine carrots and apple juice. Cook, covered, on high until carrots are tender, about 3-4 hours.

Remove carrots from slow cooker; discard juices. Be careful as the cooker will be hot!
Step 3
Return carrots to the slow cooker and stir in your brown sugar, butter and salt.

Cook, covered, on high until carrots are glazed, about 15-20 minutes longer.
Step 5
Optionally finish with some crushed nuts and enjoy!
