Instructions
Step 1
1. To a large saucepan add ginger, lemon peels, lemon juice, rosemary and water.
Step 2
2. Bring to a boil over high heat then add sugar and stir.
Step 3
3. Continue boiling for 15-20 minutes, stirring occasionally. The liquid should reduce to about 3-3 ½ cups.
Step 4
4. Strain the syrup into a jar and refrigerate until cooled completely. You can keep this refrigerated for up to 1 week.

5. When you’re ready to serve the drinks add 1 cup of club soda/seltzer water to a glass with ice.
Step 6
6. Pour in the syrup until you’re happy with the sweetness. I add about ¼ cup of the syrup.
Step 7
7. Garnish with a slice of lemon and a sprig of rosemary and serve.
