Instructions

Step 1
Blanch the beansprouts in a large pot of boiling water for about 3 mins until they are no longer raw. Rinse in cold running water, drain, then take handfuls and squeeze hard to remove excess water.
Step 2
Heat a pan with a little oil and add beaten egg. Make a large thin omelet, roll it up, and cut into thin strips.
Step 3
In a large bowl combine the cooked beansprouts and eggs along with the other filling ingredients (diced or shredded as appropriate) and seasonings.
Step 4
Wrap the filling in individual spring roll wrappers.
Step 5
Shallow fry until crispy and golden brown on both sides.
Step 6
Serve hot with chilli oil and 酱油醋!
