Instructions
Step 1
Saute onion, garlic, carrots, and celery in oil in the bottom of a large stock pot.
Step 2
Add ham bone, water, and bay leaves, and bring to a boil. Cover and reduce to a simmer for at least 45 minutes.
Step 3
Add potatoes, salt, and pepper, and cook about 15 minutes or until potatoes are tender.
Step 4
Combine cream and cornstarch in a small bowl, and stir into pot. Simmer 3-4 minutes until soup thickens.
