Instructions

Step 1
Turn oven to 190C and put baking tray on lower shelf - Separate eggs and grate cheese - Rub inside of soufflé dish with a little butter and sprinkle on a little grated cheese - Melt butter in a pot, stir in flour and mustard - Gradually add milk, stirring constantly until thickened - Remove from heat and stir in egg yolks, grated cheese, salt, pepper and cayenne - Whisk egg whites until stiff - Gently fold egg whites into the mixture and pour into the soufflé dish - Bake 30 – 35 minutes
