Step 1
Step to clean Mushroom
1. wash the whole Mushroom and Soak for 5mins
2. Continue to wash for 2 - 3 times in water.
3. then use filter water to soak for 4 to 5 hours 4. squeeze and remove mushroom from water
5. DO NOT throw away the mushroom water. need to use again
Step 2
Cook to soften the mushroom (better to do this step at night or before sleep)
1. heat up the pot, oil add 2 shallots and 1 to 2 pcs of thick ginger for fragrance
2. then briefly Stir fried Mushroom and add the mushroom water back to cook, add about 5 pcs of small rock sugar for 15mins. (optional: add dried scallop)
3.Cover the Lids till next morning and boil again for 15mins and cover lid.
(this slow cook process is important, do not keep boiling the mushroom to soften it)

Marinate a pcs of Pork Jowl with Skin Marinate: Oyster sauce, Light Soya Sauce, salt, seasoning powder

Other ingredients:
1. Stir fried Sea cucumber, Fish Maw for fragrance using Ginger and seasoning?

Cooking Step:
1. Mushroom and water remain. heat up
2. add marinate pork
3. cook till soft then 4. add sea cucumber and Fish Maw
5. Lastly add Hua Diao wine (花雕酒)
5. Lastt 5mins then add 发菜。 发菜: 1. soak in water first till soft. remove water 2.then add into the rest of the ingredient to boil for 5mins. (do not stir) 3. ** Add a little fragrance oil or pork lard to 发菜 portion, 这样会比较滑。
