Instructions
Step 1
Cut butter into small cubes, about 9 cubes per butter pat. Mix in sugar well.
Step 2
Add flour 1/2 cup at a time, mixing thoroughly with a knife after each. Optional: replace 1/2 cup wheat flour with rice flour.
Step 3
Hand-knead until all ingredients are thoroughly mixed, and a single ball can be formed.
Step 4
Hand shape a log about 12 inches long. Roll up in waxed paper. Refrigerate for 1 hour.
Step 5
Preheat oven to 275 F
Step 6
Cut slices of dough by cutting log in half until you have 32 slices. Place on parchment paper on cookie sheets, 1 inch apart.
Step 7
Cook 25 minutes, or just until starting to tan. Do not overcook.
Step 8
Cool at least 10 minutes
Step 9
Dust with confectioners sugar.
