ONE-PAN SUMMER SALMON! 🥭 These one-pan salmon cubes with chickpeas, tomatoes, and mango will blow your mind! Super easy to prepare, and perfect as a one-pan dinner! Recipe: Ingredients- 3 pounds of salmon, cut to thick cubes 1 cup of cherry tomatoes 1 can of precooked chickpeas (450g), washed and drained. 1 red onion, cut to half and sliced 1 mango, peeled and cut to cubes Handful of chopped cilantro 2-3 slices of jalapeño pepper 1 teaspoon of salt 1 teaspoon of ground black pepper 1 teaspoon of paprika 1 teaspoon of coriander 1 teaspoon of ground cumin 2 minced garlic cloves Juice from 1 lime 1 teaspoon of honey 4 tablespoons of olive oil Method- 1. Preheat the oven to 420F / 220C. 2. On a baking pan with parchment paper, add the salmon cubes, veggies and all the seasoning. 3. Mix it all well and spread it evenly on the baking pan. 4. Cover with wet parchment paper and bake it on 420F for 20 minutes. 5. Remove the parchment paper and transfer to convection broil on 450F for 5-7 minutes until it gets a nice golden color. 6. Step 1
1. Preheat the oven to 420F / 220C.
