Instructions
Step 1
Chop up veg, spread out on baking tray, crush garlic skins on, add to veg, drizzle with ive oil, salt/pep, mix, bake for 20 mins.
Step 2
Combine RWV with mustard, 2 tbspns llive oil, pinch salt/pep.
Step 3
After 20 mins tear ciabattas into bite sized chunks and add to tray with a little olive oil. Cook for 6 mins, add pine nuts, cook for another 3 mins
Step 4
Squeeze garlic out of its skin. Top rocket with veg, garlic and nuts. Tear basil leaves over a drizzle the dressing. Add pepper to taste.
