Instructions
Step 1
Peel the green skin of the rind and dice it into cubes.
Step 2
Add your watermelon rind cubes into a bowl, cover with some cold water and lemon juice and rest for 1 hour.
Step 3
Drain and add your rinds into a shallow pot along with the sugar and cook everything over low heat for a couple of hours.
Step 4
After 2 hours rinse your rinds in some cold water and serve. Buon appetito!
