Instructions
Step 1
Preheat oven to 350°F. Line two baking sheets with parchment and set aside.
Step 2
Place sugar and brown sugar into mixing bowl and grind 10 sec/speed 10.
Step 3
Add butter and peanut butter and mix 1 min/speed 4. Scrape down sides of mixing bowl with spatula.
Step 4
Add eggs and vanilla and mix 1 min/speed 4. Scrape down sides of mixing bowl with spatula
Step 5
Add flour, baking powder, baking soda, salt and peanuts and mix 20 sec/speed 5. Scrape down sides of mixing bowl with spatula and knead Dough 1 min. Scrape down sides of mixing bowl with spatula and knead a further Dough 1 min until just combined. Scoop rounded tablespoons of dough and shape into balls. Place on prepared baking sheets 2 inches apart. Press each ball with fork tines to make a crisscross design
Step 6
Bake 10-12 minutes (350F) until cookies are puffed and browning around edges but still pale on top Allow to rest on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Once cool, store in an airtight container until ready to serve.
Step 7
Note 📝 I only used 6oz of coconut sugar and swapped the flour to oat flour to make the cookies slightly healthier.
