Grease another sheet of baking paper then put it greased side down on the pastry and set a smaller baking tray on top to weigh the pastry down . Bake at 200 c/ 400 f for 25 minutes . Let them cool down and fill with your favorite fillings I like to add whipped cream and raspberries . Enjoy .
