Instructions

Step 1
Preheat the oven to 150 °C (300 °F).
Step 2
Grease or spray with non-stick cooking spray a shallow, medium-sized ovenproof dish
Step 3
Break the biscuits by hand into small pieces.
Step 4
Beat the egg whites until quite stiff.
Step 5
Beat in the sugar little by little and beat it to a thick, shiny meringue, beat in the essence.
Step 6
Gently fold the biscuit pieces into the meringue with a metal spoon.
Step 7
Sprinkle the baking powder on top and fold it in lightly as well.
Step 8
Spoon the meringue onto the pan - do not spread it evenly.
Step 9
Bake it for 30 to 45 minutes.
Step 10
Allow it to cool and store in an airtight container. (This can be baked the day before it is needed.)
Step 11
Beat the cream until stiff and pile it on the meringue.
Step 12
Sprinkle the chocolate over and place fruit on top.
Step 13
Cool it for a while and serve.
