Instructions
Step 1
Preheat oven to 200°C.
Step 2
Line baking tray with grease proof paper. Lay cod ontop and season with salt & pepper then brush with 1 tsp coconut oil and 2 tsp curry powder.

Bake for 15 mins
Step 4
Heat remaining coconut oil and fry onions for 5 mins until caramelised. Add ginger, chilli and fry for a few minutes until soft. Add tomatoes and remaining curry powder and fry for 1 min then add lentils. Cover with boiling water. Cover and simmer for 15 mins until lentils are soft.
Step 5
Remove from heat. Stir in spinach and lemon juice and pinch of salt.
Step 6
Put lentils in serving bowls, scatter with pumpkin seeds and place cod onto.
