Butternut Squash Pasta

Instructions

Step 1
Peel butternut squash and chop into small pieces.
Step 2
Put pasta on to cook according to instructions on pack.
Step 3
Put the butternut into a microwavable dish, add a little water and microwave for 5 mins or until soft.
Step 4
Once squash is soft, drain and tip into a blender with whole peeled garlic clove, veg stock, yoghurt, smoked paprika, nutmeg and season with salt and pepper. Blend until creamy.
Step 5
Drain pasta, put back into the pan and stir through the sauce.
Step 6
Serve and top with grated cheese
